Las Lajasis a farm of near-legendary status, producing coffee since 1840.
Nestled in the foothills of the Poás volcano in the Sabanilla area of the Alajuela region of Costa Rica, the farm has been passed down from generation to generation and is now run by Oscar and Francisca Chacón.
Reputation & Recognition
• Francisca notably participated in the Cup of Excellence competition in 2008, earning recognition for their unique natural processes.
• Their distinctive natural and honey-processed coffees have established Las Lajas as one of Costa Rica’s most respected specialty producers, celebrated for their wild, juicy naturals and rich honey coffees.
• The farm’s cascara (dried cherry husk) also receives significant attention, as they use only the ripest cherries to craft a high-quality cascara products.

What makes it unique
Intense fruitiness: The specialized Alma Negra process creates a more intense and concentrated flavor than typical natural coffees.
Alma Negra Process: A specific, slow, and controlled natural drying method pioneered by the Chacon family at Las Lajas farm.
Craftsmanship: The process is meticulously controlled by the Chacon family to achieve a high-quality, complex, and clean cup despite the heavy fruitiness.
Versatility: It can be enjoyed as both a filter coffee or an espresso, though the flavor profile will change slightly depending on the roast level.
