Iris Estate was established in 2017 in the highlands of Volcán, Chiriquí, at the base of Barú Volcano. With elevations up to 2,300 masl, it is among the highest-altitude coffee farms in Latin America. The estate focuses on allowing the land to express itself naturally, while the team gently tends what is needed for optimal growth.
The estate’s coffee trees produce some of the highest-quality cup profiles, showcasing the unique terroir through meticulous varietal selection, planting locations, and specialized processing methods.
Sasa Sestic, 2015 World Barista Champion, collaborates as co-producer. Together, they focus on competition-grade coffees with innovative techniques.
Signature processing techniques at Iris Estate include carbonic maceration, natural anaerobic fermentation, and carefully controlled washed protocols that enhance varietal and terroir characteristics.
The collaboration between Jamison and Sasa has resulted in internationally recognized Geisha lots, known for clarity, complexity, and floral and fruit-forward profiles.
Every stage, from planting to harvest and processing, is carefully monitored to produce high-quality coffees suitable for competitions and specialty markets.
