Perla Negra is one of the signature microlot coffees from Finca Las Lajas.

Process (Natural / Extended Drying)

• The cherries for Perla Negra are harvested only when extremely ripe, selecting top quality, high sugar cherries.

• It uses a natural process: cherries are dried whole on raised beds.

• The drying is very slow and long: Las Lajas dries for 22–27 days in total — part in sun, part under a “black shroud” (netting) to create warmth and promote sugar development.
